Thinking differently about the problem can help a lot.
Remember that someone with social phobia is very often an expert at reading body language, visual clues, facial expressions etc, so you've actually got an advantage over those people who aren't lucky enough to have those skills.
Take this into the interview room, and use the tools you've got.
You can also change the way you think about the interview... rather than seeing it as an ordeal that you have to go through to try to get the job, do some research, prepare yourself as much as you can, and then see it as an opportunity for you SHOW them all that you know, and all that you can do!
It's only thinking about things in a different way, but you'll be surprised how quickly you can get really good at it! :O)
And as for the eye contact, the oldest trick in the book is to look at the bridge of their nose, rather than looking straight into their eyes... they won't know!
